The Cevichocho or Ceviche de chochos is a vegetarian ceviche made with lupine beans! The other ingredients are onions, tomatoes, coriander, lemon, orange and tomato sauce. It is served with toasted maize, plantain chips and ají (chilli sauce). Sooo tasty and of course it's possible to find the numerous variations with meat or fish.
